The recipe
97 g · 789 g cold water · 18 h · 1:8
- Grind 97 g coarse — the texture of raw sugar — and stir it into 789 g of cold water until no dry grounds are left floating.
- Leave it 18 hours in the fridge. Longer is not stronger past a day, only heavier.
- Strain twice, the second time through paper, and serve over ice in the paper.
- The chevron is set on at the pass, not poured — there is no steamed milk in this one, so it is drawn in the foam with a pick.
