The recipe
2.4 g matcha · 63 ml · 78 °C · whisk 15 s
- Sift 2.4 g of matcha into the bowl. Unsifted it clumps and no amount of whisking fixes it.
- Add 63 ml at 78 °C — boiling water makes it bitter — and whisk in a W, wrist only, until the surface is all fine foam.
- Pour into the tulip straight away; it separates within a minute.
- Serve straight away, while the crema is still whole.
- Dust cocoa over a stencil held a finger above the surface.
