The recipe
104 g · 763 g cold water · 18 h · 1:7
- Grind 104 g coarse — the texture of raw sugar — and stir it into 763 g of cold water until no dry grounds are left floating.
- Leave it 18 hours in the fridge. Longer is not stronger past a day, only heavier.
- Strain twice, the second time through paper, and serve over ice in the cortado.
- The tulip is set on at the pass, not poured — there is no steamed milk in this one, so it is drawn in the sugar cube with a pick.
- Rest a sugar cube on the saucer. It is for the drinker to decide, not the barista.
