Pull a double into the demitasse.
Steam 20 ml to 61 °C with more air than a latte — you are after a third of foam, and it should hold a spoon.
Pour so the foam lands last and sits a centimetre deep.
Pour from height to sink the foam, then drop the jug to the surface and draw a ring through the crema.
Whip to soft peaks, no further, and spoon it on in one movement.
