The recipe

2.1 g matcha · 75 ml · 78 °C · whisk 13 s

Sift 2.1 g of matcha into the bowl. Unsifted it clumps and no amount of whisking fixes it.
Add 75 ml at 78 °C — boiling water makes it bitter — and whisk in a W, wrist only, until the surface is all fine foam.
Pour into the tulip straight away; it separates within a minute.
The rosetta is set on at the pass, not poured — there is no steamed milk in this one, so it is drawn in the foam with a pick.
