The recipe

- Pull a double into the paper.
- Steam 117 ml to 64 °C with more air than a latte — you are after a third of foam, and it should hold a spoon.
- Pour so the foam lands last and sits a centimetre deep.
- Pour from height to sink the foam, then drop the jug to the surface and wiggle a chevron through the crema.
- Build the foam a centimetre above the rim and let it set for a moment before it travels.
