House pull, kept cold, cut with tonic water for the quinine — that is the part that lights up, and the only part of this that is not ordinary coffee.
Build in the paper over one large cube so it dilutes slowly.
Serve under the sign. In daylight it is a cold americano with a strange colour.
Spoon the foam on last so it sits proud of the rim rather than folding in.
