The recipe

30 g · 478 g water · 95 °C · 4.2 min

Rinse the paper, discard the rinse water, and add 30 g at a medium-fine grind.
Bloom with 64 g of 95 °C water for forty seconds, then pour the rest in two even circles.
The bed should run dry at about four minutes. Swirl the carafe and pour into the bowl.
Serve straight away, while the crema is still whole.
Dust cocoa over a stencil held a finger above the surface.
