Flat White in a speckle mug
A flat white in a speckle mug, #670 of 999. Roastery light, oak counter. Foam Crown. Kraft sleeve. Common, roast score 101.
The recipe
17.3 g · 32 g ristretto · 130 ml milk
- Pull a ristretto — stop it short, around thirty grams, so it stays sweet under the milk.
- Steam 130 ml to 59 °C with barely any air. The texture you want is paint, not foam.
- Pour close to the surface from the start. A flat white is mostly the pour.
- Build the foam a centimetre above the rim and let it set for a moment before it travels.
