The recipe
18 g · 35 g out · 146 ml tonic · over ice
- Fill the diner with ice and pour 146 ml of tonic over it. Ice first, always — tonic poured onto a warm glass goes flat.
- Let the fizz settle, then pour the shot slowly over the back of a spoon so it layers instead of mixing.
- Serve unstirred, with the layers still showing.
- The feather is set on at the pass, not poured — there is no steamed milk in this one, so it is drawn in the foam crown with a pick.
- Build the foam a centimetre above the rim and let it set for a moment before it travels.
