The recipe
18.7 g · 27 g ristretto · 80 ml milk
- Pull a ristretto — stop it short, around thirty grams, so it stays sweet under the milk.
- Steam 80 ml to 63 °C with barely any air. The texture you want is paint, not foam.
- Pour close to the surface from the start. A flat white is mostly the pour.
- Pour from height to sink the foam, then drop the jug to the surface and walk a ring through the crema.
- Rest a sugar cube on the saucer. It is for the drinker to decide, not the barista.
