The recipe
2.5 g matcha · 75 ml · 84 °C · whisk 17 s
- Sift 2.5 g of matcha into the bowl. Unsifted it clumps and no amount of whisking fixes it.
- Add 75 ml at 84 °C — boiling water makes it bitter — and whisk in a W, wrist only, until the surface is all fine foam.
- Pour into the mug straight away; it separates within a minute.
- Build the foam a centimetre above the rim and let it set for a moment before it travels.
