The recipe
18.4 g · 20 g chocolate · 110 ml milk
- Melt 20 g of dark chocolate into the shot while it is still hot, and stir until it is glossy rather than grainy.
- Steam 110 ml of milk to 65 °C.
- Pour through the chocolate so it marbles on the way in.
- Serve straight away, while the crema is still whole.
- Finish with cocoa bean.
