The recipe
104 g · 820 g cold water · 18 h · 1:8
- Grind 104 g coarse — the texture of raw sugar — and stir it into 820 g of cold water until no dry grounds are left floating.
- Leave it 18 hours in the fridge. Longer is not stronger past a day, only heavier.
- Strain twice, the second time through paper, and serve over ice in the mug.
- Serve straight away, while the crema is still whole.
- Finish with cocoa bean.
