The recipe
28 g · 518 g water · 96 °C · 3.7 min
- Rinse the paper, tip the rinse through, and add 28 g at a medium-fine grind.
- Bloom with 53 g of 96 °C water for forty seconds, then pour the rest in two even circles.
- The bed should run dry at about four minutes. Swirl the carafe and pour into the goblet.
- Serve straight away, while the crema is still whole.
- Dust cocoa over a stencil held a finger above the surface.
