The recipe

17.7 g · 37 g out · 70 ml barista oat · 64 °C

Pull a double into the cortado and have the jug ready before it finishes.
Steam 70 ml of barista oat to 60 °C: air for the first two seconds only, then drop the tip under and spin it until the jug is too hot to hold.
Knock the jug, swirl until it shines, and pour.
Spoon the foam on last so it sits proud of the rim rather than folding in.
Rest a sugar cube on the saucer. It is for the drinker to decide, not the barista.
