The recipe
5 g masala · 105 ml water · 111 ml milk · 5 min
- Crack the whole spices — cardamom, clove, a short length of cinnamon — and simmer them in water for 5 minutes before the tea goes anywhere near it.
- Add the leaf and 111 ml of milk, and bring it up to the rise three times without letting it boil over.
- Strain into the diner. Sweeten in the pan, not at the table.
- Serve straight away, while the crema is still whole.
- Finish with cocoa bean.
