The recipe
17.8 g · 36 g out · 165 ml whole milk · 61 °C
- Pull a double into the beaker and have the jug ready before it finishes.
- Steam 165 ml of whole milk to 63 °C: air for the first two seconds only, then drop the tip under and spin it until the jug is too hot to hold.
- Knock the jug, swirl until it shines, and pour.
- Pour from height to sink the foam, then drop the jug to the surface and draw a rosetta through the crema.
- Finish with cocoa bean.
