The recipe
18.2 g · 31 g ristretto · 130 ml milk
- Pull a ristretto — stop it short, around thirty grams, so it stays sweet under the milk.
- Steam 130 ml to 62 °C with barely any air. The texture you want is paint, not foam.
- Pour close to the surface from the start. A flat white is mostly the pour.
- Spoon the foam on last so it sits proud of the rim rather than folding in.
- Dust cocoa over a stencil held a finger above the surface.
