- Grind 17 g fine enough that the first drops take five seconds to appear, and distribute before you tamp.
- Pull to 37 g in 30 seconds. If it runs fast it will taste thin and sour; if it chokes, coarsen by a hair and pull again.
- Serve in the tulip without waiting.
- Spoon the foam on last so it sits proud of the rim rather than folding in.
- Grate cinnamon over the top — a rasp, not a shaker.
