The recipe
5 g masala · 90 ml water · 90 ml milk · 6 min
- Crack the whole spices — clove, star anise, cardamom — and simmer them in water for 6 minutes before the tea goes anywhere near it.
- Add the leaf and 90 ml of milk, and bring it up to the rise three times without letting it boil over.
- Strain into the tulip. Sweeten in the pan, not at the table.
- Pour from height to sink the foam, then drop the jug to the surface and draw a rosetta through the crema.
