The recipe
17.2 g · 33 g out · 70 ml whole milk · 61 °C
- Pull a double into the cortado and have the jug ready before it finishes.
- Steam 70 ml of whole milk to 63 °C: air for the first two seconds only, then drop the tip under and spin it until the jug is too hot to hold.
- Knock the jug, swirl until it shines, and pour.
- Spoon the foam on last so it sits proud of the rim rather than folding in.
- Dust cocoa over a stencil held a finger above the surface.
