The recipe
17.5 g · 18 g chocolate · 164 ml milk
- Melt 18 g of dark chocolate into the shot while it is still hot, and stir until it is glossy rather than grainy.
- Steam 164 ml of milk to 62 °C.
- Pour through the chocolate so it marbles on the way in.
- Serve straight away, while the crema is still whole.
- Dust cocoa over a stencil held a finger above the surface.
