The recipe

- Fill the bowl with ice and pour 148 ml of tonic over it. Ice first, always — tonic poured onto a warm glass goes flat.
- Let the fizz settle, then pour the shot slowly over the back of a spoon so it layers instead of mixing.
- Serve unstirred, with the layers still showing.
- Spoon the foam on last so it sits proud of the rim rather than folding in.
