The recipe

- Start from a cold brew steeped 17 hours and filtered clear — nitrogen exaggerates whatever sediment is left.
- Charge at 28 psi and let it settle for a minute so the gas goes into solution rather than sitting on top.
- Pour hard through the plate into the paper and let the cascade fall before serving. No ice; it would thin the head.
- The heart is set on at the pass, not poured — there is no steamed milk in this one, so it is drawn in the cocoa dust with a pick.
- Dust cocoa over a stencil held a finger above the surface.
