The recipe

- House pull, kept cold, cut with tonic water for the quinine — that is the part that lights up, and the only part of this that is not ordinary coffee.
- Build in the mug over one large cube so it dilutes slowly.
- Serve under the sign. In daylight it is a cold americano with a strange colour.
- The heart is set on at the pass, not poured — there is no steamed milk in this one, so it is drawn in the whip with a pick.
- Whip to soft peaks, no further, and spoon it on in one movement.
