The recipe

17.5 g · 21 g chocolate · 110 ml milk

Melt 21 g of dark chocolate into the shot while it is still hot, and stir until it is glossy rather than grainy.
Steam 110 ml of milk to 63 °C.
Pour through the chocolate so it marbles on the way in.
Pour from height to sink the foam, then drop the jug to the surface and walk a heart through the crema.
