The recipe
6 g masala · 124 ml water · 105 ml milk · 4 min
- Crack the whole spices — clove, star anise, cardamom — and simmer them in water for 4 minutes before the tea goes anywhere near it.
- Add the leaf and 105 ml of milk, and bring it up to the rise three times without letting it boil over.
- Strain into the tumbler. Sweeten in the pan, not at the table.
- Serve straight away, while the crema is still whole.
- Rest a sugar cube on the saucer. It is for the drinker to decide, not the barista.
