The recipe
29 g · 478 g water · 96 °C · 4.1 min
- Rinse the paper, tip the rinse through, and add 29 g at a medium grind.
- Bloom with 56 g of 96 °C water for forty seconds, then pour the rest in two even circles.
- The bed should run dry at about four minutes. Swirl the carafe and pour into the mason.
- The heart is set on at the pass, not poured — there is no steamed milk in this one, so it is drawn in the foam crown with a pick.
- Build the foam a centimetre above the rim and let it set for a moment before it travels.
