The recipe

- Start from a cold brew steeped 21 hours and filtered clear — nitrogen exaggerates whatever sediment is left.
- Charge at 29 psi and let it settle for a minute so the gas goes into solution rather than sitting on top.
- Pour hard through the plate into the paper and let the cascade fall before serving. No ice; it would thin the head.
- Serve straight away, while the crema is still whole.
- Rest a sugar cube on the saucer. It is for the drinker to decide, not the barista.
