The recipe
29 g · 531 g water · 97 °C · 4.3 min
- Rinse the paper, discard the rinse water, and add 29 g at a medium grind.
- Bloom with 60 g of 97 °C water for forty seconds, then pour the rest in two even circles.
- The bed should run dry at about four minutes. Swirl the carafe and pour into the cortado.
- The wave is set on at the pass, not poured — there is no steamed milk in this one, so it is drawn in the cocoa dust with a pick.
- Dust cocoa over a stencil held a finger above the surface.
