Half Light Tide
Cappuccino in a charcoal mason
A cappuccino in a charcoal mason, #853 of 999. Rain Window light, marble counter. Rosetta on the surface. Whip. Common, roast score 134.3.
The recipe
17.3 g · 38 g out · 120 ml milk · 1:1:1
- Pull a double into the mason.
- Steam 120 ml to 63 °C with more air than a latte — you are after a third of foam, and it should hold a spoon.
- Pour so the foam lands last and sits a centimetre deep.
- Pour from height to sink the foam, then drop the jug to the surface and walk a rosetta through the crema.
- Whip to soft peaks, no further, and spoon it on in one movement.
