The recipe

1.9 g matcha · 65 ml · 84 °C · whisk 19 s

  1. Sift 1.9 g of matcha into the bowl. Unsifted it clumps and no amount of whisking fixes it.
  2. Add 65 ml at 84 °C — boiling water makes it bitter — and whisk in a W, wrist only, until the surface is all fine foam.
  3. Pour into the demitasse straight away; it separates within a minute.
  4. The tulip is set on at the pass, not poured — there is no steamed milk in this one, so it is drawn in the foam with a pick.
