The recipe
30 g · 472 g water · 96 °C · 3.9 min
- Rinse the paper, discard the rinse water, and add 30 g at a medium grind.
- Bloom with 58 g of 96 °C water for forty seconds, then pour the rest in two even circles.
- The bed should run dry at about four minutes. Swirl the carafe and pour into the cortado.
- Serve straight away, while the crema is still whole.
- Build the foam a centimetre above the rim and let it set for a moment before it travels.
