The recipe

- Put 100 ml of hot water in the goblet first.
- Pull the double on top of it, so the crema survives instead of being poured through.
- Do not stir. It settles on its own in about a minute.
- The feather is set on at the pass, not poured — there is no steamed milk in this one, so it is drawn in the cinnamon with a pick.
- Grate cinnamon over the top — a rasp, not a shaker.
