The recipe
17.1 g · 19 g chocolate · 155 ml milk
- Melt 19 g of dark chocolate into the shot while it is still hot, and stir until it is glossy rather than grainy.
- Steam 155 ml of milk to 63 °C.
- Pour through the chocolate so it marbles on the way in.
- Pour from height to sink the foam, then drop the jug to the surface and walk a feather through the crema.
- Build the foam a centimetre above the rim and let it set for a moment before it travels.
