The recipe

- Rinse the paper, discard the rinse water, and add 33 g at a medium grind.
- Bloom with 59 g of 98 °C water for forty seconds, then pour the rest in two even circles.
- The bed should run dry at about four minutes. Swirl the carafe and pour into the demitasse.
- Serve straight away, while the crema is still whole.
- Rest a sugar cube on the saucer. It is for the drinker to decide, not the barista.
