Rinse the paper, discard the rinse water, and add 31 g at a medium-fine grind.
Bloom with 67 g of 95 °C water for forty seconds, then pour the rest in two even circles.
The bed should run dry at about four minutes. Swirl the carafe and pour into the diner.
Serve straight away, while the crema is still whole.
Whip to soft peaks, no further, and spoon it on in one movement.
