The recipe

17.9 g · 36 g out · 180 ml whole milk · 64 °C

  1. Pull a double into the paper and have the jug ready before it finishes.
  2. Steam 180 ml of whole milk to 61 °C: air for the first two seconds only, then drop the tip under and spin it until the jug is too hot to hold.
  3. Knock the jug, swirl until it shines, and pour.
  4. Pour from height to sink the foam, then drop the jug to the surface and draw a dots through the crema.
  5. Finish with marshmallow.
