- Rinse the paper, discard the rinse water, and add 33 g at a medium-fine grind.
- Bloom with 59 g of 97 °C water for forty seconds, then pour the rest in two even circles.
- The bed should run dry at about four minutes. Swirl the carafe and pour into the diner.
- Serve straight away, while the crema is still whole.
