The recipe
27 g · 505 g water · 95 °C · 4.4 min
- Rinse the paper, discard the rinse water, and add 27 g at a medium-fine grind.
- Bloom with 48 g of 95 °C water for forty seconds, then pour the rest in two even circles.
- The bed should run dry at about four minutes. Swirl the carafe and pour into the demitasse.
- The heart is set on at the pass, not poured — there is no steamed milk in this one, so it is drawn in the foam with a pick.
