The recipe
18.9 g · 36 g out · 178 ml whole milk · 61 °C
- Pull a double into the mug and have the jug ready before it finishes.
- Steam 178 ml of whole milk to 65 °C: air for the first two seconds only, then drop the tip under and spin it until the jug is too hot to hold.
- Knock the jug, swirl until it shines, and pour.
- Pour from height to sink the foam, then drop the jug to the surface and wiggle a spiral through the crema.
- Build the foam a centimetre above the rim and let it set for a moment before it travels.
