- Pull a double into the demitasse and have the jug ready before it finishes.
- Steam 20 ml of whole milk to 62 °C: air for the first two seconds only, then drop the tip under and spin it until the jug is too hot to hold.
- Knock the jug, swirl until it shines, and pour.
- Pour from height to sink the foam, then drop the jug to the surface and draw a ring through the crema.
- Dust cocoa over a stencil held a finger above the surface.
