1.7 g matcha · 69 ml · 76 °C · whisk 16 s
- Sift 1.7 g of matcha into the bowl. Unsifted it clumps and no amount of whisking fixes it.
- Add 69 ml at 76 °C — boiling water makes it bitter — and whisk in a W, wrist only, until the surface is all fine foam.
- Pour into the diner straight away; it separates within a minute.
- Serve straight away, while the crema is still whole.
- Rest a sugar cube on the saucer. It is for the drinker to decide, not the barista.
