The recipe

28 g · 498 g water · 97 °C · 4.4 min

Rinse the paper, tip the rinse through, and add 28 g at a medium grind.
Bloom with 50 g of 97 °C water for forty seconds, then pour the rest in two even circles.
The bed should run dry at about four minutes. Swirl the carafe and pour into the cortado.
The spiral is set on at the pass, not poured — there is no steamed milk in this one, so it is drawn in the cinnamon with a pick.
Grate cinnamon over the top — a rasp, not a shaker.
