- Pull a double into the bowl.
- Steam 105 ml to 63 °C with more air than a latte — you are after a third of foam, and it should hold a spoon.
- Pour so the foam lands last and sits a centimetre deep.
- Pour from height to sink the foam, then drop the jug to the surface and draw a leaf through the crema.
- Whip to soft peaks, no further, and spoon it on in one movement.
