The recipe
29 g · 482 g water · 96 °C · 3.5 min
- Rinse the paper, discard the rinse water, and add 29 g at a medium grind.
- Bloom with 61 g of 96 °C water for forty seconds, then pour the rest in two even circles.
- The bed should run dry at about four minutes. Swirl the carafe and pour into the tulip.
- Spoon the foam on last so it sits proud of the rim rather than folding in.
- Dust cocoa over a stencil held a finger above the surface.
