The recipe
18.5 g · 23 g chocolate · 20 ml milk
- Melt 23 g of dark chocolate into the shot while it is still hot, and stir until it is glossy rather than grainy.
- Steam 20 ml of milk to 61 °C.
- Pour through the chocolate so it marbles on the way in.
- Pour from height to sink the foam, then drop the jug to the surface and draw a heart through the crema.
