The recipe
cold brew · 17 h steep · 32 psi nitrogen · 4 °C
- Start from a cold brew steeped 17 hours and filtered clear — nitrogen exaggerates whatever sediment is left.
- Charge at 32 psi and let it settle for a minute so the gas goes into solution rather than sitting on top.
- Pour hard through the plate into the bowl and let the cascade fall before serving. No ice; it would thin the head.
- Serve straight away, while the crema is still whole.
- Dust cocoa over a stencil held a finger above the surface.
