The recipe

- Rinse the paper, tip the rinse through, and add 27 g at a medium-fine grind.
- Bloom with 61 g of 96 °C water for forty seconds, then pour the rest in two even circles.
- The bed should run dry at about four minutes. Swirl the carafe and pour into the cortado.
- The spiral is set on at the pass, not poured — there is no steamed milk in this one, so it is drawn in the foam with a pick.
